We didn’t do much this weekend. I guess both Eric and I just needed some chill time. I did make a double batch of lasagna. I froze one and used the other for dinner on Saturday night.
Sometime this week I plan on making a double batch of shepherd’s pie and freezing one of them. I have found that this always helps when I’m pregnant. If I’m having an especially tiring day, it’s nice to get a home-cooked meal out of the freezer and throw it in the oven. I’m planning on doing this at least once a week, so my freezer will be well-stocked by the time I get to the last trimester and after I have the baby.
I did this while pg with Liam. I’ve found the easiest way to do freezer meals is just to make double of the meal you’re already planning to make one night and freeze one of them, while serving the other. I’ve tried doing large batches. That just made me more tired. But I’ve liked the doubling up stradegy. It has been helpful from time to time.
